BLT Rice Salad

What you need:

+ 4 slices bacon, chopped
+ 1 small onion, chopped
+ 2 c. water
+ 1 tsp. salt
+ 2 c. MinuteĀ® White Rice, uncooked
+ 2 c. romaine lettuce leaves, torn
+ 1 large tomato, chopped
+ 1 c. mayonnaise
What to do:
1. Cook bacon in large skillet on medium heat until crisp, turning occasionally. Drain bacon, reserving 2 Tbsp. of the drippings in skillet. Crumble bacon; set aside.
2. Add onion to drippings in skillet; cook and stir until crisp-tender. Add water and salt; bring to boil. Stir in rice; cover. Remove from heat; let stand 5 min. Fluff with fork. Cool to room temperature.
3. Add lettuce, tomato, mayonnaise and reserved bacon; mix lightly.
